How it Started Part 2

After leaving college with my chef qualifications, and a brief gap of doing nothing, I joined what was the old Trust House Forte empire. Not as a chef but as a management trainee. In those days it was very craft led so my first posting on this three year course was as a waiter in the famous Grill Room of the Cafe Royal, Regent Street, London. It was a whole different world from Reading Technical College, with fabulous food and some of the worlds greatest wines being served. I loved it all, whilst continuing to devour wine books and try different wines in my spare time.
